Method

1.Preheat barbecue flatplate to moderately high.
2.Combine mince, breadcrumbs, basil and 3 of the eggs in a large bowl. Season. Divide beef mixture into 12 portions. Roll each portion into a ball; flatten into a patty to fit bread rolls. Cook patties for 3 minutes each side or until cooked. Transfer to a heatproof plate. Cover to keep warm.
3.Heat oil on barbecue flatplate. Add onion; cook and turn for 4 minutes or until browned. Add remaining eggs; cook to your liking.
4.Toast cut side of bread rolls for 1 minute; spread with butter. Combine mayonnaise and sweet chilli sauce. Spread base of rolls with half the mayonnaise mixture.
5.For each burger, top with rocket, some of the onion, a beef patty and a slice each of cheese, tomato and beetroot. Drizzle with some of the remaining mayonnaise mixture. Top with another patty and an egg. Drizzle with remaining mayonnaise mixture. Top with cucumber and remaining onion. Serve with top of roll.

Use a vegetable peeler to slice cucumber lengthwise into long thin ribbons.
