Method

1.In a large bowl, combine tuna, spinach, sprouts, carrot, cucumber, mint, peanuts and ginger.
2.In a jug, whisk all dressing ingredients together. Toss dressing through tuna salad and serve.

Swap tuna for salmon or shredded cooked chicken. For extra flavour, add 1 teaspoon sesame oil.
