1.Preheat oven to 200°C (180°C fan-forced). Line 2 oven trays with baking paper.
2.Arrange bread on one tray. Drizzle with oil and season to taste. Toss to coat. Place prosciutto on remaining tray. Bake both trays for 10-12 minutes or until crisp. Set aside.
3.DRESSING: Place eggs, juice, parsley, garlic and mustard in a food processor. Process until smooth. With motor running, gradually add oil in a thin stream until thick. Season to taste.
4.Break prosciutto into pieces. Arrange lettuce, avocado, tomato, croutons and prosciutto on platter. Drizzle dressing over and garnish with cracked black pepper.
Place a cold egg into cold water, bring to boil and boil for 1 minute. You can add slices of grilled chicken or turkey breast.
