Method

1.Preheat oven grill on high. Spread chicken fillets out in a lightly oiled, shallow baking dish and season. Place baking dish close to heat source and grill chicken for 8 minutes, turning once, until cooked.
2.Meanwhile, place frozen vegetables in a bowl and cover with boiling water. Set aside for 3 minutes, then drain. Scatter vegetables and spinach over chicken. Top with feta and season to taste.
3.Combine breadcrumbs and butter and sprinkle over top. Return to grill for another 5 minutes, 20cm from heat source, until topping is brown and crisp and chicken is heated through. Season with black pepper and serve.

To make this with fish, use 500g white fish fillets.
