Method

1.Combine mayonnaise and dill. Season to taste.
2.Butter bread slices. Top 5 bread slices with mayonnaise mixture, then crayfish, watercress and remaining bread slices. Press down lightly; cut each sandwich in half lengthways.
3.Spread snipped chives over a plate. Brush one long edge of each sandwich with melted butter; dip into snipped chives. Arrange on a platter, top with extra watercress sprigs. Serve.
