Method
1.Using meat mallet or rolling pin, flatten chicken pieces between 2 sheets baking paper, until 5mm thick.
2.Toss chicken in seasoned flour, shaking off excess. Dip in beaten egg, then toss in combined cornflake crumbs, cheese, thyme and zest. Chill.
3.Heat oil in a wok or deep saucepan on high. When hot, deep-fry potatoes in batches for 5-10 minutes, until golden. Drain on paper towel.
4.Deep-fry chicken nuggets, a few at a time, for 3-4 minutes, turning, until golden. Drain on paper towel.
5.Just before serving, re-fry chips in hot oil for 3-4 minutes, until crisp. Drain and serve chips with nuggets, mayonnaise, salad and lemon wedges.
