Chicken and mango salad

Method

1.Bring large pan of water to boil and cook potatoes for about 10 to 15 minutes until tender. Drain and set aside.
2.Bring second pan of water to boil and cook asparagus for a few minutes. Drain and set aside.
3.While potatoes are cooking, bring a third pan of water to a gentle simmer and poach chicken for about 5 minutes, until cooked through. Remove from water and set aside to cool. When cool, use your fingers to shred chicken.
4.Cut potatoes in half. Place all salad ingredients in bowl and drizzle with oil and lemon juice. Toss to combine. Season with salt and pepper to taste and serve immediately.
