Method
1.Preheat oven to hot, 200°C. Line a baking tray with baking paper.
2.Place pizza base on prepared tray. Spread evenly with tomato passata.
3.Arrange eggplant, capsicum and artichoke hearts over base. Sprinkle with basil and parmesan.
4.Finish with bocconcini and olives. Bake 5-10 minutes, until cheese melts and browns lightly. Serve in wedges with salad.
Tomato ‘passsata’ is a cooked tomato concentrate. Tomato paste can be substituted. Lebanese bread, pita bread or naan make good alternative pizza bases.
