Pineapple and orange loaf
Preheat oven to moderate, 150°C. Lightly grease a deep, 12cm X 20cm loaf pan. Line base and sides with baking paper.
In a medium bowl, using an electric mixer, beat all ingredients except pineapple together on low speed, about 30 seconds, until just combined. Increase speed to medium. Beat, 3-4 minutes, until creamy. Stir in pineapple. Spoon mixture into pan.
Bake 40-45 minutes, until cooked when tested. Cool in pan 5 minutes. Turn onto a wire rack to cool completely.
Cream cheese icing
In a small bowl, using an electric mixer, beat cream cheese and butter together until creamy. Gradually add icing-sugar mixture, then juice, beating until smooth. Spread over cake. Sprinkle with zest strips.
Squeeze excess liquid from pineapple by pressing it between 2 sheets of absorbent paper.
