Method

1.Heat 1 tablespoon oil in a large, heavy- based saucepan on high. Cook chicken in batches, until lightly browned. Set aside.
2.Add remaining oil to pan. Saute onion for 3 minutes. Add mushrooms and saute for 2 minutes, until soft.
3.Return chicken to pan with simmer sauce and pumpkin. Bring to a boil. Reduce heat and simmer, covered, for 20 minutes. Serve with warm naan bread.

Cut chicken and pumpkin into similar-sized cubes. Scrape seeds from pumpkin with a spoon, remembering to remove all membrane.
