1.In a large frying pan, combine oil, onion, celery and carrot and cook over medium heat, stirring frequently until onion has softened. about 5 minutes. Add garlic and continue stirring over heat for 2 minutes. Add mince and sausage (break sausage up with a wooden spoon) and cook, stirring constantly, until meat changes colour, about 5 minutes.
2.Add wine and bring to a boil, then simmer until wine has evaporated, about 2 minutes. Season and serve with pasta, or freeze for future meals.
