Method

1.In a medium bowl, combine mince, onion, breadcrumbs, parsley, egg and garlic. Season to taste. Shape mixture into 4 even-sized, flattened patties. Cover and chill for 15 minutes until firm.
2.Meanwhile, spray a large non-stick frying pan with oil and heat on high. Cook patties for 2-3 minutes each side. Set aside and keep warm.
3.To make the roast tomato; arrange tomatoes on an oven tray cut side up. Drizzle with oil and top with a good grinding of black pepper. Bake in a moderate oven, 180°C, for 10 minutes.
4.To make the caramelised onions; heat oil in a non-stick frying pan on medium. Add onions, vinegar and sugar. Cook, stirring, for 4-5 minutes until onion is caramelised. Stir in water. Cover and simmer for 5 minutes until onion is tender. Remove lid.
5.Arrange lettuce on one half of roll. Top with prosciutto, patty, caramelised onion and tomato. Finish with remaining half roll. Serve with wedges.

To make potato wedges; cut unpeeled potatoes into wedges and place in a baking dish. Spray with oil or toss in 1 tablespoon olive oil, sprinkle with sea salt and black pepper. Bake in a hot oven, 200°C, for 25-30 minutes until golden. Bake proscuitto in a moderate oven, 180°C, for 4-5 minutes or cook in a lightly oiled non-stick frying pan on high for 1-2 minutes each side.
