Beef and tomato salad with namh jim
1.Heat oil in a large frying pan over high heat. Cook beef for 3 minutes each side for medium-rare or until cooked to your liking. Transfer to a plate. Cover with foil; rest for 5 minutes. Slice thinly.
2.Place coriander and green chilli in a mortar. Gently pound with pestle until crushed. Add juice, fish sauce, garlic, ginger and palm sugar, stir until combined and sugar dissolves.
3.Combine beef. tomato, coriander, mint, red chilli and dressing in a large bowl. Serve.
Use beef leg steaks instead. Cooking time will vary. You can use lemon juice instead of lime, and swap palm sugar for brown sugar. Tomato medley mix includes a variety of fresh tomatoes, such as cherry, grape and tear drop If unavailable, use 4 medium regular tomatoes, quartered.
