Method
1.Preheat a covered barbecue to moderately high heat according to manufacturer’s directions. Lightly grease 2 baking trays.
2.Heat oil in a medium frying pan over moderate heat. Add onion; cook and stir for 5 minutes or until soft. Add mince; cook, stirring with a wooden spoon to break up lumps, for 5 minutes or until browned. Stir in pizza sauce.
3.Place pizza bases on prepared trays; spread with mince mixture, then top with capsicum, mushroom, ham and cheese. Place trays in preheated barbecue; cook for 10 minutes or until bases are browned and cooked. Serve with salad.
Place pizza trays on wire racks (or clean, empty cans) during cooking; this helps ensure bases don’t burn. No covered barbecue? Cook pizzas in an oven preheated to 220°C/200°C fan forced. Cooking time may vary. Make ahead: Make mince mixture a day ahead. Cover, then refrigerate.
