1.Place potato in a large saucepan; cover with cold water. Bring to the boil; boil 10-12 minutes, or until tender.
2.Drain potato; return to pan, then place over low heat. Add milk and oil; mash until almost smooth. Season.
3.Meanwhile, wrap each piece of pork in a bacon rasher. Cut each apple crossways into 4 thick rounds (don’t peel or core apples).
4.Heat half the extra oil in a large frying pan over moderately high heat. Cook pork and apple, turning, 8 minutes, or until browned and cooked. Transfer to a heatproof plate. Cover to keep warm.
5.Increase heat to high. Add remaining oil and carrot to same pan; cook, stirring, 2 minutes, or until just tender.
6.Add sauce, juice, water and beans; cook, stirring, 2 minutes, or until sauce thickens.
7.Serve pork and apple with carrot mixture and potato mash.
