Asparagus penne with garlic crumbs

Tender asparagus, salty prosciutto, crunchy garlic crumbs and rich blue cheese make this easy pasta dish a winner.

Ingredients

Method

1.Preheat oven to medium hot (180°C). Line an oven tray with baking paper.
2.Cook pasta in a large saucepan of boiling salted water, following packet instructions. Drain well.
3.Place prosciutto in a single layer on oven tray. Bake for 3-5 minutes, until crisp. Set aside.
4.Melt half the butter in a large frying pan on high. Fry breadcrumbs and garlic for 3-4 minutes, until crisp and golden. Transfer to a bowl and set aside.
5.Add asparagus to same pan with remaining butter and cook for 1-2 minutes, until just tender.
6.Return pasta to pan with blue cheese. Toss well. Season to taste.
7.Serve topped with crispy prosciutto and garlic crumbs. Garnish with parsley, if liked.

Chopped brie can be used in place of blue cheese. This dish works equally well with olive oil instead of butter.
