Apricot pork with almond vegies

This tender braised apricot pork is wonderful served with caramelised onions, flaked almonds and long-grain rice.

Ingredients

Method

1.Spray a medium frying pan with oil, then heat over high heat. Cook pork for 8 minutes or until browned on both sides. Transfer to a heatproof plate; cover with foil.
2.Reduce heat to moderate. Add onion to pan; cook and stir for 5 minutes or until onion is well browned and soft. Add combined apricot nectar, 1 cup water and soup mix; cook and stir for 3 minutes or until sauce boils and thickens slightly. Stir in soy sauce.
3.Return pork and juices to pan. Turn pork to coat in sauce. Reduce heat to low. Cover; simmer for 10 minutes or until pork is cooked and sauce reduced slightly.
4.Place broccoli and 1 tablespoon water in a heatproof bowl. Cover with plastic food wrap. Microwave on high in 30-second bursts, until just tender. Add beans; microwave for 30 seconds more or until heated. Drain; toss with almonds. Serve pork with vegetables and rice.

Gluten-free option: You can replace soy sauce with tamari. Check soup mix label for gluten content.
