Barbecued garlic prawns

These garlic prawns are perfect for a weekend barbecue. Serve up these zesty skewers with fresh salad and a wedge of lemon for a simple lunch.

Method

1.In a large bowl, combine garlic, coriander, lemon rind, juice and oil. Season to taste. Add prawns, toss to coat well. Cover and refrigerate for 1 hour to marinate.
2.Preheat barbecue on high. Drain prawns, and thread onto metal skewers. Put marinade aside. Cook prawns for 2-3 minutes each side, brushing with marinade, until pink and cooked through. Cook lemon halves, serve with bread and salad.
