Method
1.Preheat oven to 180°C. Line a 12-hole muffin pan with paper patty cases.
2.In a large bowl, using an electric mixer, beat eggs and sugar together for 3-4 minutes until fluffy. Add coffee powder and vanilla, and beat until well-combined.
3.Sift flour and cocoa together. Fold lightly through egg mixture alternating with yoghurt, until just combined. Do not overmix.
4.Spoon mixture into patty cases until 2/3 full. Bake for 12-15 minutes until a skewer inserted into centre comes out clean.
5.Cool in pan for 5 minutes, then transfer to wire rack to cool completely. Dust with cocoa.
If using instant coffee granules, dissolve with 2 teaspoons of boiling water to make a paste.
