Lime and passionfruit syrup cake

Wonderfully fluffy and moist, this glorious citrus cake is beautiful served with a cup of hot tea. Drizzled with a sweet passionfruit and lime syrup, it makes the ultimate fruity dessert for any occasion.

Method

1.Preheat oven to 190°C (170°C fan-forced). Brush an 18cm x 28cm lamington pan with melted butter. Line base with baking paper and brush with butter again.
2.Using an electric mixer, cream butter and sugar together in a bowl until light and fluffy. Add eggs, one at a time, beating well after each addition. Mix in rind.
3.Fold in flour with water, to form a dropping consistency. Spread mixture into prepared pan, smoothing top.
4.Bake 20-25 minutes, until golden and a skewer comes out clean. Leave in pan to cool slightly.
5.Make syrup: Combine caster sugar and lime juice in a small saucepan. Stir on low heat, until sugar has dissolved. Bring to boil, stirring. Boil, without stirring, until light golden and syrupy.
6.Remove syrup from heat, cool slightly. Stir through passionfruit pulp. Spoon syrup over top of cake while still warm. Cool cake to serve.

It is important not to stir syrup once it has boiled, as this may cause mixture to crystallise.
