Curried cauliflower soup

Packed full of vegetables and tender ham off the bone, this curried cauliflower and butter bean soup is beautiful served with a warm piece of freshly toasted garlic bread.

Method

1.Heat oil in a large saucepan over moderate heat. Add onion and garlic. Cook and stir for 5 minutes or until soft. Add curry powder, cook and stir for 1 minute. Add cauliflower, cook and stir for 1 minute or until coated in curry mixture. Add crumbled stock cubes and boiling water. Simmer, covered, for 8 minutes or until cauliflower is just tender.
2.Using a slotted spoon, remove half the cauliflower florets from soup. Add half the beans to soup. Using an electric stick mixer, blend soup until smooth. Add reserved cauliflower florets, remaining beans and the ham to soup. Simmer, uncovered, for 3 minutes or until heated. Sprinkle soup with parsley and serve with garlic bread.

Ask the deli counter to cut a ham piece for you. Make ahead: You can make soup a day ahead. Cool, cover, then refrigerate.
