Salmon with salsa verde

With a crispy exterior, this pan fried salmon fillet is filling, healthy and super nutritious. Perfectly paired with the addition of fresh salsa verde and steamed potatoes.

Method

1.Make salsa verde by combining parsley, gherkins, capers, oil, lemon rind, juice and garlic in a bowl using a fork. Season to taste.
2.Heat a non-stick frying pan on high. Add salmon, skin side down, and cook, 2-3 minutes each side, until cooked to your liking. Serve with salsa verde and steamed greens, if you like.
