Method
1.Cut feta into 2cm cubes and reserve the oil marinade. Place capsicum, cucumbers, tomatoes, onion, olives and feta cubes in a large bowl. Add a little of the reserved oil and toss gently.
Salad, without the addition of the marinated feta, can be prepared several ahead. Add the marinated feta just before serving. Marinated feta is available from supermarkets, delicatessens and fresh food markets. The oil marinade contains herbs and spices and can be drizzled over salads as a dressing.
