Method
1.Preheat oven to 190°C (regular). Peel potatoes and cut into fat fingers. Soak in a bowl of cold water for 10 minutes, drain and roll up in a clean tea towel to dry.
2.Put potatoes in a shallow ovenproof dish lined with baking paper. Sprinkle with ½ tsp salt and chilli flakes and drizzle with oil. Using the paper, gently toss potatoes in seasonings and oil until evenly coated.
3.Bake potatoes for about 1 hour, turning them over once or twice during cooking. For added flavour, stir through lime zest and sprinkle with sea salt, then garam masala. Toss gently and serve.
