If you've got 15 minutes and are looking for a delicious and simple appetiser to start off your favourite Italian meal, then this mixed bruschetta recipe is for you.
1.Preheat oven to hot, 200°C. Lightly grease a baking tray.
2.Arrange bread on prepared tray. Brush with oil. Bake for 4-5 minutes, until golden. Set aside to cool.
Tomato and olive
3.Combine all ingredients in a bowl. Season to taste and set aside.
White bean and Pancetta
4.Heat a non-stick pan on medium. Cook pancetta for 3-4 minutes, until crisp. Set aside.
5.Place 1/2 cup beans (reserve remainder for Mixed Bean Salad) in a blender with oil, lemon juice, garlic and mustard. Process until smooth. Stir through parsley and season to taste.
6.Serve bruschetta’s in bowls with toasts on the side. Sprinkle crispy pancetta over the white bean mix.
