Method
1.Preheat oven to 200°C. Spray a 12-hole muffin pan lightly with oil.
2.Cut 12 x 10cm circles from pastry using a cutter. Ease into pans.
3.Whisk eggs until well combined. Mix in ham, cheese and green onion. Season to taste.
4.Spoon mixture evenly between pastry cases. Top with tomato pieces, if desired. Bake, 10-12 minutes. Serve.
