1.Preheat oven to 220°C/200°C fan-forced. Lightly grease a baking tray. Place potato on prepared tray. Spray with cooking oil spray. Bake for 15 minutes, until crisp and golden
2.Meanwhile, combine lemon rind, juice, parsley and garlic in a small bowl. Heat a non-stick frying pan on high and spray with cooking oil spray. Season fish well and cook for 3 minutes each side, until golden and cooked through. Remove from heat and pour over lemon juice mixture.
3.Serve fish with chips and drizzle with pan juices. Serve with lemon wedges and a dollop of low-fat tartare sauce, if you like.
To par-cook potatoes, place in a microwave-safe bag or covered bowl and microwave at 100% (1200w) for 5-7 minutes, or until almost tender.
