Method

1. Preheat oven to hot, 200°C. Line 2 oven trays with baking paper.
2.In a small bowl, combine dates, walnuts and blue cheese.
3.Work with 1 sheet of filo at a time, keeping the others covered with a clean tea towel to prevent them drying out. Brush with butter, top with another sheet. Brush with butter. Cut into 5 strips lengthways.
4.Place 1 tablespoon of date mixture into the lower left and corner of the pastry strip. Fold over right to left to form a triangle, then keep folding to end of strip, retaining triangular shape. Arrange on oven tray.
5.Repeat with remaining pastry, butter and filling. Bake for 8-10 minutes, until crisp and golden.

Makes 20 You can make these ahead of time, cover with plastic wrap and chill until required. Bake when ready to serve.
