Ingredients

Method

1.Sift flour and salt into a large bowl. Make a well in the centre. Whisk buttermilk and egg; add to flour, whisking constantly, until smooth. Cover with plastic food wrap. Chill 30 minutes, to rest.
2.Meanwhile, heat a large frying pan over moderate heat. Cook bacon, stirring, 3-4 minutes or until crisp. Drain on paper towels.
3.Wipe pan clean and place over moderate heat. Brush pan with melted butter, to grease lightly. Drop 6 individual teaspoons of batter into pan; spread to 5cm rounds. Cook 1-2 minutes or until bubbles appear on the surface and bottom is golden. Turn and cook further 1-2 minutes, until golden. Transfer to a wire rack to cool.
4.Arrange the blini on a serving platter. Top with cream, avocado, bacon and freshly ground black pepper.

You could substitute salami for the bacon, if preferred.
