Sweet, salty, stick and incredibly moorish, these American-style pork rashers make the ultimate Friday night dinner at home with the family. They're wonderfully tender, and go brilliantly with a creamy coleslaw.
1.In a large non-metallic baking dish, combine sugar, sauces, honey, cumin, coriander, chilli flakes, salt and pepper. Add pork, turning to coat the marinade. Cover and chill 2 hours, or overnight, to marinate.
2.Preheat oven to 200°C. Line a large oven tray with baking paper.
3.Transfer rashers to tray. Bake 40-45 minutes, turning and basting with pan juices after 30 minutes until golden and cooked through.
4.Meanwhile, make coleslaw: Combine all ingredients in a large bowl. Serve rashers with slaw.
