Ingredients

Method

1.Remove 18 leaves from witlof and set aside. Finely slice the remaining leaves.
2.Preheat grill to high. Line a large baking tray with non-stick baking paper. Arrange witlof leaves on tray.
3.Heat oil in a frying pan on medium. Saute sliced witlof, onion and leek for 3-5 minutes, or until starting to soften. Add breadcrumbs and parsley, and cook for 2 minutes, stirring until well combined.
4.Remove from heat and stir through blue cheese. Place tablespoons of mixture into leaves on prepared tray. Grill for 2-3 minutes, until filling starts to colour. Serve.

Use radicchio leaves in place of witlof (or a combination of both), if desired. Filling can be made 2 hours ahead, then place in leaves and grill, just before guests arrive.
