Citrus dressing

Method

1.To make citrus dressing: combine all ingredients in a screw-top jar; shake well.
2.Remove and discard heads and beaks from octopus. Shell and devein prawns, leaving tails intact.
3.Cut calamari lengthways down centre; lay out flat with inside facing upwards. Make shallow cuts diagonally across calamari; cut into 2cm slices in opposite direction.

5.In a large bowl, combine all seafood with half of the dressing, cover with plastic wrap; refrigerate for 3 hours or overnight.
6.Drain seafood, discard marinade.
7.On a heated oiled grill plate (or grill or barbecue) cook seafood, in batches, for about 5 minutes each batch, or until browned lightly and just changed in colour.
8.Toss warm seafood with remaining dressing and herbs. Divide among plates and serve.

Not suitable to freeze. Not suitable to microwave.
