Spinach tart

Enjoy the benefits of nutritionally rich, antioxidant-filled spinach in this tasty spinach and cheese tart. Cut up a slice for your family and serve with a side salad for a healthy dinner.

1.Preheat oven to 200°C. Join pastry sheets at one edge using water to stick edges together. Drape pastry into a 30cm loose-bottomed tart tin, push into corners, then use a sharp knife to cut off excess, ensuring pastry sits a little above rim to allow for shrinkage.
2.Prick base with a fork, line with baking paper and fill with uncooked rice or kidney beans, or ceramic baking beans. Bake blind for 15 minutes. Remove paper and rice/beans.
3.Heat 2 tablespoons oil and sauté onion and garlic until soft.
4.Mix together eggs, cheeses, salt and pepper, grated nutmeg, sautéed onion and garlic and pour into pastry case.
5.Top with spinach and drizzle with remaining oil (so spinach doesn’t dry out). Bake for 30 minutes or until pastry is golden and filling is firm to the touch.
6.Serve tart hot topped with dressed salad greens.
