Method

Spinach soup with croque monsieur

1.Heat oil in a large saucepan over moderate heat. Add onion and garlic; cook and stir for 3 minutes or until softened. Add frozen spinach, potato, stock and dill. Cover; bring to the boil.
2.Reduce heat. Simmer, uncovered, for 5 minutes. Remove from heat; cool slightly.
3.Blend soup, in batches, until smooth. Place in a clean saucepan over low heat. Add cream; cook and stir for 3-4 minutes or until heated. Season soup with salt and pepper.
4.Make Croque Monsieur as recipe directs. Ladle soup into mugs or small bowls. Serve.

5.Combine cheese, cream and mustard in a small bowl. Spread mixture over 2 slices of bread. Top with ham, then remaining bread. Spread both sides of each sandwich with butter.
6.Heat a medium frying pan over moderate heat. Fry sandwiches for 2-3 minutes on each side or until golden. Cut in half. Serve with soup.

Blend soup with an electric stick mixer.
