Method

1.Place rice in a saucepan with boiling water, cardamom and a pinch of salt. Cover and cook on low for 12 mins, until water has absorbed. Turn off heat, cover and set aside for 10 mins.
2.Meanwhile, melt butter and cook onion in a large frying pan on medium-low for 5 mins, until slightly golden. Remove half of onion, set aside. Increase heat and continue to cook for another 5-10 mins, until browned. Remove fried onion and set aside.
3.Return golden onion to pan. Stir in cumin and coriander. Cook for 1-2 mins, until fragrant. Add spinach and toss until just wilted. Add rice and mackerel, toss to heat through. Add lemon juice. Season.
4.Top pilaf with fried onion and coriander and serve with lemon wedges.
