Method

1.Preheat oven to 180°C. Cut 1 large bread stick into 1cm slices. Spread 1/2 cup prepared pesto sauce over 1 side of each piece of bread. Arrange half of slices, pesto side up, in 4 ramekins or ovenproof dishes or 1 large casserole dish.
2.Sprinkle with 1 cup chopped mixed antipasto vegetables.
3.Whisk eggs and milk in a jug and season. Pour half of mixture over bread, pressing down gently with fingertips. Top with remaining slices of bread, pesto side down. Pour over remaining egg mixture, pressing down to ensure bread is well soaked. Sprinkle with 1/2 cup grated parmesan.
4.Place dishes in a baking pan. Add enough hot water to come halfway up sides of dishes. Bake for 15-20 minutes (35-40 minutes if using a casserole). Serve with salad.
