1.Whisk together vinegar, lemon rind and juice, mint, garlic, chilli flakes, olive oil and 1 teaspoon salt in a medium bowl. Add pork and capsicum and turn to coat.
2.Preheat grill on high. Thread four pork pieces and four capsicum pieces alternately onto skewers. Reserve marinade. Cook skewers under grill for 4 minutes each side, until meat is browned and cooked to your liking. Brush occasionally with reserved marinade.
3.Scatter skewers with extra mint leaves. Serve with steamed rice and lemon wedges.
If using wooden skewers, soak in cold water for 30 minutes before using to avoid them burning on the grill.
