Ingredients

Pork patties
Pineapple salsa
Kaffir lime mayonnaise

Method

1.Combine pork, onion, ginger, coriander, honey, five spice and white pepper in a large bowl. Season and shape mixture into 16 patties. Refrigerate for 20 minutes.
2.Meanwhile make pineapple salsa, combine all ingredients in a small airtight container. Cover and refrigerate until needed.
3.To make kaffir lime mayonnaise, combine all ingredients in a small airtight container. Cover and refrigerate until needed.
4.Heat a char-grill pan on medium. Spray patties with cooking oil and cook for 4-5 minutes each side, until cooked through.
5.To assemble, spread a little mayonnaise over baguette bases. Top each with salad greens, 2 patties, salsa and a little more mayonnaise. Season and serve.

You will need about 4 kaffir limes for this recipe. If they are unavailable, use regular time zest and juice instead. Finely shredded kaffir lime leaves could also be substituted for the zest. The patties can be made and cooked the day before and transported in airtight containers. If cooking them at the picnic, transport them in a disposable foil container. Add spice to the salsa with chopped chilli.
