1.In a large saucepan, heat 2 tablespoons of oil on medium. Cook onion and garlic, stirring, for 5 minutes, until soft. Add rice and dill and cook another 2 minutes. Add spinach and enough water to cover and stir until spinach wilts.
2.Add remaining oil and season to taste. Cover, reduce heat to low and simmer 20-30 minutes, stirring once or twice to prevent mixture sticking to pan, until rice is cooked and liquid absorbed. Remove from heat, scatter over feta, cover and set aside for 5 minutes.
3.Spoon into a bowls. Top with pine nuts, sumac and mint to serve.
Sumac is tangy. If you don’t have any, squeeze a lemon over the dish to serve.
