Method
1.Preheat oven to 180°C. Lightly grease 4 holes of a texas muffin pan. Line each hole with 2 strips of baking paper, overlapping at the base.
2.Spread mustard over both sides of steak. Wrap prosciutto around each steak, securing with a toothpick. Chill until required.
3.To make kumara bake, layer kumara in recesses of muffin pan. In a jug, combine cream and garlic. Season to taste. Carefully pour cream mixture over kumara. Sprinkle with cheese. Place on a baking tray and cover with foil. Bake for 25 minutes. Remove foil and cook further 15-20 minutes until golden and tender.
4.When ready to serve, heat oil in a large frying pan on high. Cook steaks 2-3 minutes each side until cooked to taste. Serve with kumara bake and steamed vegetables, and drizzle with balsamic glaze.
Kumara (sweet potato) could be replaced with potato.
