Method

1.Scrub mussels and remove beards.
2.Bring the water to a boil in medium saucepan, cook mussels covered for about 5 minutes or until mussels open (discard any that do not). Drain and discard liquid. Break open shells and discard tops.
3.Loosen mussels from bottom shells with a spoon and place mussels in shells, in single layer, on serving platter. Cover and refrigerate 15 minutes or until cold.
4.Combine remaining avocado, ginger, shallot and lime juice in small bowl and avocado mixture among mussels.

Use a stiff brush to scrub the mussels under cold water.
