Method

.To make dough, sift flour and baking soda into a bowl and make a well in the centre. Place lard in well with 3 pinches of salt. Add warm water and mix in lard with fingertips. Begin incorporating flour and continue until it starts to resemble a hard, smooth dough (add more water or flour if needed). Mix only for 3-4 minutes. Cover with a slightly damp cloth and rest for 30 minutes.
.Place all mushrooms on an oven tray and drizzle with oil, scatter with garlic and oregano and bake for 12 minutes at 180°C. Cool, then thinly slice.
.Quarter the dough and roll into four balls. Roll into 2mm-thick rounds the size of a dinner plate. Heat a large frying pan till hot, add 1 dough round and cook for 1 minute on each side.
.Add a quarter of the chopped mushroom mixture and a quarter of the smoked cheddar to cover half the piadina then place 2 slices of prosciutto on top. Fold the other half of the piadina over the top then cook for 1 minute on each side.
.Repeat with remaining dough rounds.
