Method
1.In a medium bowl, combine lime and garlic. Add fish. Cover and chill 10 minutes.
2.Thread fish and capsicum alternately onto skewers. Season to taste.
3.Spray a char-grill or barbecue plate with oil. Preheat on high. Cook skewers for 2-3 minutes each side or until cooked through. Serve with rice, lime zest and wedges.
Soak bamboo skewers in water for 30 minutes to prevent scorching. Mix extra grated lime rind through rice if desired.
