Method
1.Spray a hot pan with cooking oil. Cook fish 2-3 minutes on each side, drizzling with lemon juice. Keep warm.
2.Place 1 slice cheese on bottom half of each bun. Melt under a hot grill. Spread mayonnaise over remaining halves.
3.Arrange lettuce on melted cheese. Top with fish, drizzle with a little more mayonnaise and replace bun tops. Serve immediately.
Fish can also be cooked on a preheated barbecue plate, if preferred.
