Method
1.Cook rice according to packet directions. Place in a large bowl and fluff grains with a fork. Cool to room temperature.
2.Slice snow peas diagonally into three pieces. Add to rice with remaining vegetables and herbs. Season to taste with lemon juice and salt and pepper. Stir well and serve as an accompaniment.
Blanch snow peas by placing in a heatproof bowl. Cover with boiling water and stand for 2 minutes. Drain, rinse under cold water and drain well again.
