Method
1.Preheat a char-grill pan over moderately high heat. Spray pumpkin and onion with oil. Grill vegies in batches for 2-3 minutes each side or until brown and tender. Transfer to a plate.
2.Combine oil and vinegar in a screw-top jar. Season with salt and pepper; shake until well combined.
3.To serve, combine rocket, pumpkin, onion and olives in a large bowl. Drizzle with dressing; gently toss. Sprinkle with feta and serve at once.
Cook extra pumpkin to have on hand. Pop into fritters or breakfast omelets to get more vegies into the day. For a complete meal, serve with grilled fish or beef sausages.
