1.To make pickled celery, stir sugar, vinegar, water and salt until sugar dissolves. Add celery and toss to combine. Chill for 1 hour.
2.In a pan, stir soy, mirin and water on medium heat until just simmering. Add mushrooms and simmer for 4-5 minutes, until just tender. Remove from heat.
3.Heat oil in a large frying pan on high. Season beef and cook for 3-4 minutes each side for medium-rare, or until cooked to your liking. Transfer beef to a plate, cover loosely with foil and rest for 5 minutes.
4.Drain pickled celery, then stir in mint. Place mushrooms and a little cooking liquid on serving plates. Top with steaks. Season and serve with salad greens and pickled celery.
