Ingredients
Method
1.Process onion, garlic. ginger, chilli and 1 tablespoon of water, until smooth.
2.Heat oil in a large saucepan over moderate heat. Add onion mixture, potato, kumara, tomato and spices. Cook, stirring, 5 minutes.
3.Add lentils and stock. Cover and bring to the boil. Reduce heat. Simmer, stirring occasionally, 25-30 minutes, or until lentils are tender and sauce thickens.
4.Meanwhile, preheat oven to 180°C (160°C fan-forced). Spray chapatti with oil; sprinkle with sea salt and cracked black pepper. Place onto 2 large baking trays. Bake 6-8 minutes or until golden and crisp. Break into pieces. Serve with dhal.
Lentils are a great source of protein. To save time, use curry powder instead of individual spices. Flavour and colour will vary. Look for a 270g packet of chapatti in the Asian section of your super market, which will yield 6 chapattis.
