Method

1.Heat olive oil in a large saucepan on medium. Saute bacon, onion, potato and garlic for 4-5 minutes, until onion is tender.
2.Add carrots and celery stalks. Cook on high heat, stirring, for 4-5 minutes, until vegetables begin to colour. Add chicken stock and cannellini beans. Simmer 10 minutes. Add pasta and simmer 10-15 minutes, until pasta is tender.
3.Stir silverbeet through. Season to taste. Top with grated parmesan and serve with crusty roll or toast.
