Caramel sauce
Method
1.Preheat the oven to l70°C.
2.Place the dates, water and soda into a bowl, stir to combine then leave for five minutes.
3.Cream the butter and sugar in the bowl of an electric mixer until pale. Then add eggs one at a time, beating well after each.
4.Sift in flour and mix to combine with the date mixture.
5.Divide the mixture between six one-cup capacity moulds or ramekins then place on to a tray. Transfer to the oven.
6.Cook for 30 minutes or until cooked when tested with a skewer.
7.To make the caramel sauce, place the sugar, cream and butter into a small saucepan over a medium heat and stir until combined. Simmer for five minutes.
8.Serve the puddings with cream or ice-cream and caramel sauce.
